Although YouTube has taken away the buttons to do the following (either YouTube is annoying or I’m blind), the manual solution is to paste ‘em to the back of your search results URL and hit enter again.
Sort by view count:
&search_sort=video_view_count
Sort by rating:
&search_sort=video_avg_rating
Sort by date uploaded (latest first):
&search_sort=video_date_uploaded

Hey. I noticed the disappearance of the sort functions from youtube sometime back too (much to my annoyance).
But! One of the sort functions is still there - the sort by date uploaded function, though its worded differently now.
After running a search on YT, below the search button/fields, there should be a row which states (from left to right):
Search for: Videos/Channels
Sort by: Relevance/Date
The latter option should appear in the centre of your window.
Just click “Date” and YT will sort the vids according to their upload timings. =)
Can’t find where the other two options have disappeared to however. =/

Ah shucks. Thanks for the reminder about the Date sort option. I’ve noticed that it’s still around, but I still posted the string to append. What the heck is wrong with me?
So it turns out, the problem’s more serious than anticipated– it’s the brain, not the eyes. :D
